On a recent visit to Chicago, I stumbled upon a restaurant with at least one exceptional vegan friendly choice on their menu. I happened to be staying in the River North neighborhood at the Residence Inn Marriott. There is a restaurant in a connected building called Hub51.
I ordered the “Roasted Butternut Squash and Black Lentil Tacos”. The dish is worth the visit for any vegan looking for a unique combination of tastes. Four soft corn tortillas are filled with grilled veggies, black lentils, roasted pumpkin seeds and shredded raw butternut squash. The topper is a very tasty cashew aioli sauce and salsa. I was very satisfied. The dish is served with a side of rice and black beans.
Hub51 is a particularly good place to patronize if you are with others who prefer non-vegan fare. The service was excellent. The wait staff and the manager were personable and friendly.
